The sun was up and it was humid but the weather didn’t stop me from visiting once again Sharyn’s Cansi House to savor their piping hot cansi.

Cansi and Batuan: Perfect Match

Cansi is the Ilonggo version of bulalo, bone in beef shank with bone marrow, tendons and ligaments, boiled and cooked for hours to make sure it comes out really tender. What makes the flavor stand out is the use of batuan, a souring agent that can be found in the island of Negros. It gives the broth a mild sourness that complements the flavor of the beef.

Tender beef and melt in your mouth bone marrow, wow! Oopps, watch your cholesterol though.

 

As usual, Sharyn’s was jampacked as it was already lunchtime. As I was taking my time to place my order I watched the customers eagerly waiting for their food and how cansi was delivered quickly, freshly cooked and really hot straight from the kitchen.

Most customers love the utok (bone marrow) and litid (tendons and ligaments) and they would hold the bone and eat the meat and ligaments with gusto. Hmmn, yummy!

Well-known and recognized

Sharyn’s is owned by Mrs. Delia Perez who opened the business way back in 1983 and through the years has been recognized as the place to go to if you want to taste authentic Ilonggo cansi. In fact, it has been written about in various local and national newspapers and featured by local and national TV programs like Pinasarap of Kara David, Food Prints of Sandy Daza and Lakwatsero of Robi Domingo to name a few. They also placed number 32 in the World Street Food Congress (WSFC) last year.

Aside from cansi, Sharyn’s also serves different kinds of lutong bahay (home cooked) viands that the owner and their hardworking staff carefully prepare.

Eating cansi is the best part of the visit though as can be attested by many of their suki (frequent buyers) and customers from different parts of the country and balikbayans and tourists who come and dine at Sharyn’s Cansi House.
