Authentic Kapampangan Palabok

 

Pancit Palabok is a Filipino party food that is usually present in the dining table during birthdays, reunions, fiestas and other family gatherings.  It is a dish made from thin rice noodles, shrimps, squid, tinapa flakes and crushed chicharon mixed in an orange-colored creamy sauce.  Through the years the ingredients have evolved and each region has its own version.

It was through my high school buddy Vincent Garrucho that I discovered a place that serves authentic Kapampangan pancit palabok here in Bacolod City—Lei & Jerry’s Palabok House. The diner is situated near a university, a public school and some offices so their pricing is reasonable, just right for students and office workers who want to eat quality food that’s clean, tasty and easy on the budget. Actually, this is the first palabok house that I have heard of here in Bacolod. Since I got positive feedback and good reviews I got curious and decided to taste their specialty.

Lei & Jerry’s Palabok House is a small, cozy restaurant where you can hang out with friends. The place can seat approximately 15 to 18 people.  I like the wood interiors and if you have an eye for art, you will appreciate the wall murals painted by the owner himself, Jerry Gasendo, who apart from being a kitchen master, is also an artist.

So where did the Kapampangan influence come from? Jerry’s business partner and girlfriend Lei Santiago, hails from San Fernando, Pampanga and the pancit palabok recipe is a family recipe of the Santiagos that have been handed down to them by their elders.

The yummy pancit palabok, for the price of Php70 per  order, is big and they don’t scrimp on the ingredients.

The tokwa’t baboy is also a winner.  The deep fried sliced tokwa and sliced pork belly topped with chopped crunchy celery with spiced vinegar and soy sauce dressing is really good. They also serve arroz lengua, honey glazed chicken and of course the original Kapampangan sisig. Fruit shakes are also available, a refreshing way to end your meal. Soon they will be serving halo-halo (mixed fruits in crushed ice with milk) and ice cream too.
