Celebrating the holidays isn’t complete without the traditional Filipino pancit on the table. This isn’t only a Pinoy thing but a tradition mostly practiced in Asian countries where noodles are usually part of every occasion.

I spent many years living in Manila and when we moved to Bacolod five years ago, I thought it would take some time for me to taste authentic Pancit Malabon again. But I was happy to know that an eatery in the city also serves this pancit as their specialty. That’s Tita Beth’s Pancit Malabon House.

And so one late rainy afternoon in 2016 I went to Tita Beth’s to check what they had to offer. I was able to meet the owners, Tita Beth and her husband Tito Mer Sales, who are both hands on in managing their business. And it all started from there.

FAST FORWARD TO TODAY

We are still in the middle of the pandemic, facing a battle we are not even sure where it will be leading us. Because of this, a lot of businesses, particularly in the food industry, have temporarily closed while others have shut down.

I’m glad that through all these, Tita Beth’s Pancit Malabon House still continues to serve delicious food and satisfy the Negrense palate. This only shows that a small eatery like Tita Beth’s can withstand the global crisis and maintain its loyal customers.

I revisited their Lacson St. Branch last January 1 (New Year 2021) and food orders on that day just kept coming in.

 

THIS IS IT, PANCIT!

You know why Tita Beth’s Pancit Malabon became an instant hit in Bacolod? The taste itself is like the original pancit we used to eat in Manila. Either you order a small or large bilao, the toppings on the pancit are still the same, loaded!

Since the first time I visited them and tasted their food, we in our home have patronized their business and I can say Tita Beth’s has maintained the quality of their food.

I got excited opening the bilao during our family lunch on New Year’s day, smelling different kinds of flavors and aroma.  Truly an appetizing way to start the year!

Tita Beth’s uses thick noodles for this dish.  The sauce makes it a lot satisfying and flavorful because of its texture, seafood taste and color.

I mentioned earlier it’s loaded. It really is!  Squid, tinapa flakes, sliced hard boiled eggs, Chinese cabbage, thin pork slices are mixed all together with the thick sauce.

This makes a delectable pancit malabon bilao to share with your loved ones.

PANCIT AND MORE

Aside from pancit which is the star in Tita Beth’s, they also serve nilaga (pata), pork barbeque, kare-kare, lechon kawali , tokwa’t baboy, sizzling bulalo, grilled squid, grilled spare ribs and other Pinoy ulam favorites.

If you come around 4pm, they already start making bibingka and puto bumbong.  These delicacies are also served in their outlet in Ayala Mall.

Personally, I like the pork barbeque.  I’m not much of a pork eater but when I tasted it, I can’t help but get another stick. The taste is just right, smokey and juicy pork cutlets–perfect match for steaming hot rice.

Oh what a filling way to start the year!
